A number of businesses across different industries, such as hairdressers, beauty salons and gyms have opted to remain closed until October 11, including The Strength Collab, owned and operated by Jacquie Dolbel.
She said there was a number of reasons behind her decision, including her health.
"Reason one was pretty selfish, just because of my chemo treatment," she said.
"I just want to see what this first initial week of being open is going to do."

Jacquie said she is also delaying opening due to changes in legislation come next Monday, after NSW is expected to hit the 70 per cent double dose vaccination target, triggering the easing of restrictions.
"Whereas these remaining four days, I would have been able to let anybody in, come Monday, I then have to start checking vaccination certificates," she said.
"I would then have to, if anyone was not vaccinated, tell them that they could not come back next week, which was just a logistical nightmare for me."
While she respects and understands whatever choice businesses have made this week, Jacquie said she's using this time to prepare for reopening.
"I'm giving my clients this week to get themselves organised with their vaccinations certificates, making sure they've got them printed or on their apps so that they can show me," she said.
"Then I wanted to use this week to read through what it actually means for having to check people, what I've got to do, how many people I can have per square metre and all of that sort of jazz."
She said the safety of her clientele, who come from a variety of backgrounds, was paramount.
"We do have to learn to live with this but I also don't want to be an exposure site," she said.
"I am excited to get back to work, but in the safest way I can possibly can."
