The Impy Hotel Cowra is under new management. David Oliver, son of Len and Lorraine Oliver is excited to return to Cowra to become a business owner. The Olivers have been business owners in town for more than 65 years.

"This is such a great pub. Col and Janelle Jeffs should be congratulated for all of the hard work and love they have poured into this venue,” Mr Oliver said.
On Sunday, June 6, The Jeffs, and Olivers made the transition official with a change of hands party, attended by friends, family and some of the establishment’s regular guests.
“This is exactly the kind of thing we wanted, a great night to celebrate the change with our friends and family,” Mr Oliver said.
Mr Oliver has big plans for the pub.
"Our goal is to bring a new energy to the Impy,” he said.
“Our strategy is going to be based around all of the little things that make a pub great; good food, awesome staff and a comfortable environment for casual drinkers and diners alike.
"We don't want to be just a restaurant, or a bistro, or just a watering hole; we want to be all those things rolled into one."
Mr Oliver believes he has the experience needed to ensure the Imperial thrives.
His well-developed career in hospitality management has seen him in many prestigious establishments including Sydney’s Wallaby Bar, The Watsons Bay Hotel, The Winery by Gazebo, The Glenmore Hotel in The Rocks and more recently for one of Perth’s biggest Pub Tavern operators.
New lunch and dinner options will be launched on Monday, July 14, featuring a fresh look at the current menu.
"The food offering will be simple and affordable classic pub meals with some top notch daily specials, all made from as much locally sourced produce as humanly possible," he said.
He will also have a wine list perfect for any occasion, and taste.
"My old mate, Sarah Fagan, is going to be piecing together our wine list,” he said.
“She has promised me our list will be the best in the whole of Australia."
Sarah is currently working as one of the top winemakers for Debortoli Wines in the Yarra.
