Normally held in June, the championships have been rescheduled for September 4 and 5 at the Cowra Showground.
Chief Steward Roger Traves he's expecting a great competition.
"This year, due to COVID-19, we made the decision to postpone this year's event," he said.
"This has allowed the committee's organisation of the event to meet relevant conditions set out by the NSW Government and health authorities.
"In the lead up to this year's event, the drought conditions experienced throughout many states has been replaced by a very good season in many areas.
"We are looking forward to showcasing not only the excellent line up of sheep but also the beauty of the Lachlan region."
Mr Traves said the program has some slight changes.
"The performance class has been split into three classes, senior, intermediate and junior," he said.
"The winners of each class will then complete for overall Performance Ram. There has been shorn ram lamb and shorn ewe lamb classes also added.
"We are hoping that the restrictions on school excursions will change in time to make it possible for the schools to compete."
For the first time, in conjunction with the championships, the Australasian Dorset Championships Online Sale will also be displayed on a large screen at the event on September 5 at 1pm.
"This will be an interesting conclusion to the weekend," Mr Traves said.
"We are pleased to be able to promote the Dorset breeds by first having a tremendous show and giving breeders the opportunity to see many of the rams being offered in the online sale.
"We see this as a great opportunity for stud breeders from many states... arrangements have been made to accommodate any sheep that may need to be housed for a longer period."
The annual dinner will be held pending COVID-19 restrictions.
