After leaving school, Penny received her Bachelor of Exercise Science (Rehabilitation) degree, with honours, and commenced her PhD studies focussing on the benefits of nutrition and exercise and improving the current preventative strategies and interventions for non-communicative disease, in particular obesity and Type II Diabetes.
Penny is the daughter of Peter and Coral Larsen and has always been involved in community activities, having helped at the Cowra Show in addition to being Vice Captain of Cowra High School in 2010 and then Residential Advisor at Charles Sturt University in 2012.
Penny has a great enthusiasm for her research, knowing that it will hopefully change in a positive way the lives of many disease sufferers.
It is wonderful that at the dinner the winner of the 2015 HSC Scholarship will be announced and a very successful former Cowra High School student, Jenni Brammall will be the guest speaker.
